Cakes to Build Cakes (Protein Pancakes)

This is the same protein pancake batter I give clients whether it is breakfast, right after a workout, or a dessert style snack. The batter stays the same. What you top it with changes it.

Ingredients

  • 30g buckwheat flour
  • 10g all-purpose flour
  • 1 scoop protein of choice
  • 50g pumpkin
  • 50g egg whites
  • 100g milk of choice
  • 1g baking powder
  • 10g honey or sweetener
  • Vanilla, to taste
  • 100g fruit of choice

How to make it

  1. Blend the dry ingredients and the wet ingredients separately.
  2. Combine them until just mixed.
  3. Cook like a pancake. Add the fruit to the batter before you flip.

Great for breakfast or a dessert style snack.

Make it yours

Which fruit?

Use a sliced banana instead of berries. You add about 30 calories and 9g of carbs, and protein and fat stay about the same.

Want it more fall flavored?

Stir in another 50g of pumpkin and a dash of cinnamon. You add about 20 calories and 5g of carbs, plus a bit more fiber.

Which protein flavor?

Chocolate, cinnamon or any other whey flavor you like works the same way. The macros do not change.
