Chocolate Daddy Cakes
These are the higher carb, growth version of my buckwheat pancakes. Cream of rice, egg whites, pumpkin, banana and a heaping scoop of whey, blended and cooked like a pancake. I eat them as dessert and I do not feel bad about it.
One base recipe, then you pick the flavors. Swap the cream of rice, the whey and the mix-in and you have a new dish. They also work great for off-season bodybuilders, hybrid athletes, or anyone trading regular pancakes for something with more protein and nutrients.
The numbers
Estimate for the whole stack, before flavors and toppings. Assumes one heaping scoop of whey and water as the liquid. Your cream of rice, whey, mix-in and drizzle will move these numbers. These are estimates, and your ingredient choices will move them.
Ingredients
- 80g cream of rice (I use Bowl O' Gainz Brownie Batter)
- 20g buckwheat flour
- 100g canned pumpkin
- 100g egg whites
- 1 banana, medium to large
- 100g water, almond milk or milk
- 4g baking powder
- 1 pinch salt
- 1 heaping scoop protein powder (I use Farm Fed Campfire PB Cup)
- Optional mix-in and drizzle: PBfit
How to make it
- Blend. Everything goes into a small blender or food processor. Blend until smooth. No whisking. Nobody has time for it.
- Cook. Cook it like a regular pancake in a nonstick pan. Pour, wait, flip. If you went chocolate, the dark color is not burned.
- Roll. Roll it up like a crepe, dessert style, and finish with a PBfit peanut butter drizzle. Or skip the rolling and use the batter for waffles, with no extra water.
Using whey isolate? Add 20g extra pumpkin to the batter.
Make it yours
Want a different flavor?
Change the cream of rice flavor, the whey flavor and the mix-in. The base stays the same, so the numbers stay close.
Want waffles instead?
Use the batter as is in a waffle iron and skip any extra water.
Using whey isolate?
Add 20g extra pumpkin to the batter so it does not turn out dry.
