Hulk Soufflé Breakfast Bake

This is the one recipe I give clients who want something quick to throw together, whatever meal it is for. Four ingredients, one blender, and about 12 minutes in the oven.

It is a bake, not a mystery. Add toast and it is breakfast. Add roasted potatoes and it is lunch. Add rice and it is dinner. Same bake, you pick the meal.

Ingredients

  • 150g egg whites
  • 2 whole eggs
  • 115g low-fat cottage cheese
  • 100g spinach

How to make it

  1. Blend everything until frothy and fully combined.
  2. Pour into a casserole dish or a muffin tin.
  3. Bake at 355F for 12 minutes, or until just set.

Make it yours

Want more protein and fat?

Crack in one more whole egg. You add about 70 calories, 6g protein and 5g fat, which helps on a day when your calories are running higher.

Want more flavor?

Stir in 30g shredded cheese. You add about 120 calories, 7g protein and 10g fat without changing how you make it.

Need it lower fat?

Skip the whole eggs and use extra egg whites. You cut about 90 calories and 10g of fat and keep almost all the protein.

Want more volume?

Toss in a handful of diced bell peppers. You add fiber and vitamin C for about 15 calories.
