Sweet Potato Beef Pockets

These are a template more than a recipe. Make one loose potato dough, then change the filling every time. Mine had herb-spiced lean ground beef cooked with spinach and a little fat-free cheese inside.

Stuffed, sealed and pan fried until the outside has a real crust.

The numbers

Per pocket, my version. Estimate based on 4 pockets, about 4 oz of raw 93% lean beef in each, all-purpose flour and fat-free cheese inside only. These are estimates, and your ingredient choices will move them.

Ingredients

  • 4 medium sweet potatoes, or any medium potatoes
  • 1/2 cup egg whites
  • 1 cup flour of your choice, to start (you may need more)
  • Filling of your choice. Mine: herb-spiced lean ground beef, spinach and a small amount of fat-free cheese
  • Optional: more cheese for a cheese crust

How to make it

  1. Roast or steam the potatoes until they are completely soft all the way through. Skin on or off, your call.
  2. Mash them and let them cool until close to room temperature but still warm.
  3. Stir in the egg whites and flour and mash until it is a loose dough, a little looser than bread or pizza dough. Add more flour if your potatoes are wet.
  4. Cook your filling and let it cool a bit.
  5. Form dough in the palm of your hand, add the filling, cover with more dough from your other palm, and pinch it sealed.
  6. Pan fry on medium for 3 minutes per side.
  7. Raise the heat to medium high and cook another 3 to 5 minutes per side for a deeper crust. Add cheese to one side for a cheese crust if you like.

Different potatoes hold different amounts of water. Start with about a cup of flour and go from there.

Want a different filling?

Any meat or vegetable mixture works. Cook it first and let it cool a bit. Your numbers will change with what you put in.

Using regular potatoes?

Any medium potato works. Cook it completely soft before you mash it.

Dough too wet?

Add more flour a little at a time until you can shape it in your palm.
